Ingredients

  • 2 cups mixed olives
  • 2–3 tbsp extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 1 strip of lemon zest (or orange zest), finely sliced
  • 2–3 sprigs of fresh rosemary
  • 3–4 sprigs of fresh thyme or oregano
  • ½ tsp dried chilli flakes (adjust to taste)
  • ½ tsp fennel seeds (lightly crushed)
  • Freshly ground black pepper, to taste

Instructions

Step 1

Warm the oil in a small saucepan over low heat. Add garlic, zest, rosemary, thyme/oregano, chilli flakes, and fennel seeds. Let it gently sizzle for 2–3 minutes to infuse the oil. Do not let the garlic brown.

Step 2

Add the olives to the pan and stir to coat in the warm oil and aromatics. Heat gently for about 3–5 minutes—just enough to warm them and help them absorb the flavours.

Step 3

Remove from heat and transfer to a bowl or jar. Add freshly ground pepper and let cool.

Step 4

Marinate for at least 2 hours (or ideally overnight) in the fridge. Bring to room temperature before serving.
