Ingredients

1 ciabatta or focaccia loaf

1 x 90g Giorgio's Burrata

300g Swiss brown mushrooms, sliced

2 tbsp extra virgin olive oil

10g butter

2 cloves garlic, minced

1 tsp balsamic vinegar

4 sprigs of basil, leaves picked

Bread and butter cucumber pickles

Salt and pepper to taste

Mushroom & Burrata Sandwich

Instructions

Step 1

Heat a frying pan over medium-high heat. Fry the mushrooms in olive oil and butter with a pinch of salt. Fry for a few minutes or until caramelised. Add the garlic and sauté for another minute. Remove from the heat and add the balsamic vinegar.

Step 2

Spread the burrata over the base of your bread, spreading the curds to the edge. Add the mushrooms, basil and pickles. Drizzle with extra virgin olive oil and close with the top of the loaf. Slice in half to serve.
