Ingredients

Whipped Ricotta:

400g Giorgio's Ricotta

2 tbsp olive oil

Salt & cracked black pepper, to taste

Zest of ½ lemon (optional)

Green Olive Salsa:

¾ cup green olives, finely chopped

1 tbsp capers, chopped

1 small shallot, finely diced

1 tbsp parsley, finely chopped

1 tbsp lemon juice

2 tbsp olive oil

Fresh cracked pepper

8 slices sourdough or ciabatta

6–8 anchovy fillets

Olive oil for brushing

Anchovy Toast with Whipped Ricotta & Green Olive Salsa

Instructions

Step 1

Whisk ricotta with olive oil, a pinch of salt, pepper and lemon zest until smooth and airy.

Step 2

Mix chopped olives, capers, shallot, parsley, lemon juice and olive oil. Season with cracked pepper.

Step 3

Brush bread lightly with olive oil. Grill or toast until golden and crisp on the outside.

Step 4

Spread whipped ricotta thickly on warm toast. Lay an anchovy fillet over each. Spoon green olive salsa on top. Finish with a drizzle of olive oil and extra cracked pepper.
