Ingredients

400g Giorgio's Ricotta

2 tbsp olive oil

Salt & cracked black pepper

1 jar (300g) marinated artichokes, drained

Zest of 1 lemon

For the Gremolata

¼ cup finely chopped parsley

1 small garlic clove, very finely minced

1 tsp red pepper flakes (optional)

Zest of ½ lemon

1 tbsp olive oil

Pinch salt

Whipped Ricotta with Artichoke Gremolata

Instructions

Step 1

Using a food processor, add ricotta, lemon zest olive oil, salt and pepper and blitz until smooth.

Step 2

Spread onto a serving plate, creating soft swirls with the back of a spoon. Mix parsley, garlic, lemon zest, red pepper flakes, olive oil and a small pinch of salt. Stir well and set aside.

Step 3

Scatter artichokes over the ricotta. Spoon over the fresh gremolata and finish with extra red pepper flakes if using and a drizzle of olive oil.

Step 4

Serve with warm grilled bread so it scoops up all the creamy ricotta and herbs.
