
Ingredients
4 slices light rye bread, toasted
2 x 125g Giorgio's Buffalo Mozzarella, roughly torn
200g premium smoked salmon
8 cornichons, thinly sliced
½ red onion, finely shaved
Fresh dill sprigs
1 lemon
Dressing:
2 tbsp extra virgin olive oil
1 tsp Dijon mustard
1 tsp lemon juice
Freshly cracked black pepper

Instructions
Step 1
Preheat oven to 180 degrees celcius.
Step 2
Drain buffalo mozzarella well.
Step 3
Toast rye bread until crunchy and golden.
Step 4
Spread and arrange Buffalo Mozzarella over each slice. Layer smoked salmon on top. Scatter with cornichons, shaved red onion and fresh dill.
Step 5
Whisk together olive oil, Dijon and lemon juice. Drizzle lightly over each smørrebrød.
Step 6
Finish with cracked pepper and extra dill. Serve immediately.
